This beginner’s guide will break down the basics to ensure that when you arrive at a sushi restaurant, you order like a pro.

What is Sushi In Reality?

Put simply, sushi is conceived as an amalgamation of vinegared rice with various ingredients such as raw or cooked seafood, vegetables, and sometimes egg. The term “sushi” is meant for the rice instead of the fish; in that sense, you can even have it without any seafood at all.

Sushi Rolls (Maki)

Maki is really what most of us think of when we think of sushi. It is the roll made of seaweed called nori, on the outside wrapped around rice, fish, and other fillings, and sliced into little bite-sized pieces. Popular ingredients include tuna, cucumber, avocado, and crab. And there are fun varieties such as California rolls, spicy tuna rolls, and dragon rolls.

Even inside-out rolls known as uramaki, where the rice is the outside covering and the seaweed is inside hiding its ingredients, become especially popular in the United States.

Nigiri: Simple and Elegant

Nigiri is the more traditional style: a hand-formed mound of sushi rice topped with a slice of raw fish or cooked seafood such as shrimp or eel. There is usually a small amount of wasabi placed between the rice and the topping, and quite often the whole dish is held together by a very thin strip of seaweed. Nigiri is balanced, clean, simple, and focused on the flavor of fish.

Sashimi: Sushi Without Rice

Sashimi means very thin cuts of raw fish, served without rice. Although not technically sushi (because it is rice-less), it is an important part of Japanese cuisine. Sashimi attempts to bring out the quality of the fish in the sense that it is usually served fresh with soy sauce, wasabi, and sometimes daikon radish.
